Well-known specialties include ričet (a barley and bean stew with smoked meat), jota (a tangy sauerkraut and bean stew often made with potatoes and smoked pork), and štruklji (rolled dumplings or pastries that can be sweet or savoury, served as a side or dessert). Idrijski žlikrofi are regional filled dumplings from Idrija, small pockets of pasta dough traditionally filled with herbed potato and served with a lamb or meat sauce.
